Totally dumb question. Is the word "I" a proper noun? As in: "I have a dog." ?

It isn't a noun. It is a pronoun. Pronouns take the place of nouns and can be used as the subject of a sentence but they aren't nouns. Since most of the time pronouns can be swapped with nouns, you may even decide to teach them as a third form of a noun.
